This warm, nourishing soup is simple, soothing, and surprisingly filling without being heavy. Loaded with tender vegetables and gentle seasoning, it’s perfect when you want something clean, cozy, and low-carb—especially for meal resets or chilly evenings.
Ingredients
1 tbsp olive oil or butter
½ medium onion, chopped
3 cloves garlic, minced
3 cups green cabbage, chopped
2 celery stalks, sliced
1 green bell pepper, diced
1 can diced tomatoes (no sugar added)
4 cups chicken or vegetable broth
1 tsp Italian seasoning
½ tsp paprika
Salt and black pepper, to taste
Optional Garnish
Fresh parsley or sliced green onions
Instructions
In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook until soft and translucent.
Stir in the garlic and cook for about 30 seconds, just until fragrant.
Add the cabbage, celery, and bell pepper. Stir and cook for 5–7 minutes, allowing the vegetables to soften slightly.
Pour in the diced tomatoes and broth. Add Italian seasoning, paprika, salt, and pepper.
Bring the soup to a gentle boil, then reduce heat and simmer uncovered for 20–25 minutes, until all vegetables are tender and flavors are well blended.
Taste and adjust seasoning as needed.
Ladle into bowls and garnish with fresh parsley or green onions if desired.
