8 oz unsweetened chocolate (or keto-friendly dark chocolate like Lily’s)
8 tbsp unsalted butter (1 stick)
1/4 cup heavy cream
4 large eggs
2 cups granulated keto sweetener (e.g., monk fruit blend)
1 tbsp vanilla extract
1/4 tsp salt
Instructions
In a large heat-safe bowl, melt the chocolate and butter together using either a microwave (in short intervals) or a double boiler. Stir until smooth and fully melted. Avoid overheating.
Remove from heat and mix in the heavy cream and sweetener until well combined.
In a separate bowl, beat the eggs with a mixer for 1–2 minutes until light and fluffy. Add vanilla extract and mix again.
Pour the chocolate mixture into the eggs and beat until fully incorporated and smooth.
Preheat oven to 325°F (160°C). Grease an 8×8-inch baking dish with butter.
Pour the batter into the dish, gently tap or shake to level and remove air bubbles.
Bake for about 45 minutes, or until set.
Remove from oven and let cool on a rack for at least 25 minutes before slicing.
