Ingredients
1 1/2 lbs beef (sliced steak or stew meat)
2 bell peppers, sliced
1/2 onion, sliced
1/2 cup beef broth
1/4 cup soy sauce (or coconut aminos)
1 tablespoon garlic, minced
1 teaspoon ginger (optional)
1 tablespoon olive oil
1 teaspoon black pepper
Optional: 1/2 teaspoon chili flakes
1 1/2 cups cauliflower rice (for serving)
Instructions
Add beef, bell peppers, and onion to the slow cooker.
Pour in beef broth and soy sauce.
Add garlic, ginger, olive oil, pepper, and chili flakes if using.
Stir lightly to combine.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until beef is tender.
Serve over warm cauliflower rice.
