Crispy Sandwich 🥓🧀

Only 4 ingredients and just 1g net carb per serving
This was my first attempt at a keto crisp sandwich—and it turned out delicious! Perfect for breakfast, lunch, or even as a pizza crust.
Ingredients
½ cup pork rind crumbs
½ cup shredded mozzarella cheese
2 tbsp mayonnaise
1 large egg
Instructions
Make the Dough
Whisk the mayonnaise and egg together in a bowl.
Stir in mozzarella cheese and pork rind crumbs until combined.
Let the dough rest for a few minutes to thicken.
Cook the Crisp
Heat a cold, dry, nonstick 8-inch skillet over medium heat (no oil needed).
Add half of the dough to the pan.
With wet hands, press the dough flat until it covers the bottom of the pan or forms a small round.
Crisp Both Sides
Cook for 3–5 minutes, or until golden and crispy.
Flip and cook the other side until crisp.
Make the Sandwich
Flip once more, add cheese and/or your favorite filling to one side.
Fold the other half over the top.
Flip a few times until the filling is warm and the cheese is melted.
Serve
Remove from pan and enjoy hot.
