Ingredients
Crust
½ cup crushed pecans
¼ cup almond flour
1 tbsp monk fruit sweetener (or sweetener of choice)
2 tsp butter, melted
Filling
1 large package sugar-free strawberry Jell-O
1 cup boiling water
¾ cup cream cheese, divided
1½ cups heavy whipping cream
Instructions
Make the Crust
Crush pecans in a blender or food processor.
Add pecans and almond flour to a skillet and lightly toast until fragrant.
Remove from heat and stir in melted butter and sweetener.
Press mixture into the bottom of a pan and place in the refrigerator to chill.
Make the Filling
In a large mixing bowl, beat ¼ cup cream cheese with the heavy whipping cream on high speed until stiff peaks form.
In a separate bowl, dissolve the strawberry Jell-O in 1 cup boiling water, stirring until fully dissolved.
Add the Jell-O mixture and the remaining ½ cup cream cheese to a blender and blend until smooth.
Slowly add the Jell-O mixture to the whipped cream, mixing on low speed until fully combined.
Assemble
Pour filling over the chilled crust.
