Ingredients (6 servings)
For the beef layer:
1 ½ lbs ground beef
1 tbsp olive oil (if needed)
2 tsp chili powder
1 tsp cumin
1 tsp smoked paprika
1 tsp garlic powder
½ tsp onion powder
Salt & pepper to taste
½ cup salsa (sugar-free, low-carb)
For the creamy layer:
4 oz cream cheese (softened)
½ cup sour cream
2 large eggs
½ tsp salt
For topping:
2 cups shredded cheddar cheese
1 jalapeño (sliced, fresh or pickled)
½ cup diced tomatoes
2 green onions (sliced)
Instructions
Cook beef: In a skillet, cook ground beef with seasonings until browned. Stir in salsa and let simmer 5 minutes. Remove from heat.
Make creamy layer: In a bowl, whisk together cream cheese, sour cream, eggs, and salt until smooth.
Assemble casserole:
Grease a 9×9 or round baking dish.
Spread creamy mixture on the bottom.
Add seasoned beef layer on top.
Sprinkle shredded cheddar cheese generously.
Bake: Preheat oven to 375°F (190°C) and bake for 25 minutes until cheese is melted and bubbly.
Garnish & serve: Top with jalapeño slices, diced tomatoes, and green onions before serving.
