Ingredients
1/2 cup butter
1/2 cup heavy cream (replaces milk)
1/3–1/2 cup powdered keto sweetener (monk fruit/erythritol/allulose)
1/4 cup unsweetened cocoa powder
1/2 cup natural peanut butter (no sugar added)
1 tsp vanilla extract
1 1/2 cups unsweetened shredded coconut or crushed nuts (replaces oats)
1/2 cup sugar-free chocolate chips
Instructions
In a saucepan over medium heat, melt butter, heavy cream, sweetener, and cocoa powder. Stir until smooth and slightly thickened (do not boil too long).
Remove from heat and stir in peanut butter, vanilla extract, and chocolate chips until melted and smooth.
Mix in shredded coconut or crushed nuts until fully coated.
Scoop spoonfuls onto parchment paper.
Let set at room temperature or refrigerate until firm.
