Ingredients
1 large onion, sliced into rings
1/2 cup almond flour (swap: crushed pork rinds for extra crisp)
1/4 cup grated Parmesan cheese
1 egg
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
Cooking spray or oil
Instructions
Preheat oven to 200°C (400°F) and line a baking sheet.
Separate onion slices into rings.
In one bowl, whisk the egg. In another, mix almond flour, Parmesan, garlic powder, paprika, salt, and pepper.
Dip each onion ring into the egg, then coat in the dry mixture.
Place coated rings on the baking sheet.
Spray or drizzle with oil.
Bake for 15–20 minutes until golden and crispy.
Serve hot.
