Ingredients
2–3 cups keto cookies or wafers (almond flour cookies or store-bought low-carb wafers)
1 cup heavy cream
4 oz cream cheese, softened
1/3 cup powdered keto sweetener (monk fruit/erythritol blend)
1 tsp vanilla extract
1/2 cup sugar-free peanut butter (no added sugar)
2–3 tbsp butter, melted
Sugar-free chocolate syrup
Instructions
Make the Cream Layer
In a bowl, beat heavy cream until soft peaks form. In another bowl, mix cream cheese, sweetener, vanilla, and peanut butter until smooth. Fold whipped cream into this mixture until light and fluffy.
Assemble Layers
Line a dish (8×8 or similar) with a layer of keto cookies.
Spread half of the cream mixture over the cookies.
Repeat
Add another layer of cookies, then spread the remaining cream mixture on top.
Finish
Crush a few cookies and sprinkle on top. Drizzle generously with sugar-free chocolate syrup.
Chill
Refrigerate for at least 4 hours (or overnight) until set and cake-like.
Serve
Slice and serve chilled.
