Cheesy Garlic Pull-Apart Rolls

What You’ll Need
Makes 12 rolls, ∼2g net carbs each
For the dough:
1 1/2 cups shredded mozzarella – low moisture, part skim
2 oz cream cheese – softened
3/4 cup blanched almond flour – superfine
1 tbsp baking powder – for the rise
1 large egg – room temp works best
1/2 tsp garlic powder – dough needs flavor too
For the cheesy garlic top:
3 tbsp butter, melted – salted
1 tsp garlic powder – or 2 cloves minced
1 tsp dried parsley or Italian seasoning – for those green flecks
1 cup shredded cheddar + mozzarella mix – for the melty top like the image
How to Make It
Step 1: Make fathead dough
Preheat oven to 375°F. Grease a 9-inch round cake pan. Microwave mozzarella and cream cheese 60 seconds. Stir until smooth. Add almond flour, baking powder, egg, and garlic powder. Mix until a dough forms.
Step 2: Roll the balls
Divide dough into 12 pieces. Roll each into a ball with oiled hands so they don’t stick. Place them in the pan with a little space between each.
Step 3: Garlic butter time
Mix melted butter, garlic powder, and half the parsley. Brush half of it over the tops of the dough balls.
Step 4: Cheese it up
Sprinkle the shredded cheddar + mozzarella mix generously over all the rolls. Make sure it gets in the cracks.
Step 5: Bake
Bake 18-22 minutes until rolls are golden brown, puffed, and the cheese on top is bubbly and toasted like the photo.
Step 6: Finish
Brush with remaining garlic butter and sprinkle rest of the parsley right out of the oven. Let cool 5 minutes so they set up.
