Ingredients:
2/3 cup frozen cranberries
2/3 cup slivered almonds (optional)
1/3 cup coconut flour
1 tsp baking powder
1/2 tsp sea salt
1 tsp vanilla
3 Tbsp coconut oil
3 eggs
1/2 tsp orange extract
1/2 cup sweetener
1/4 cup almond milk
Instructions:
1. Preheat oven to 400 and line a 12 count muffin tin with liners.
2. Sift dry ingredients in a small bowl and set aside.
3. In a separate bowl, melt coconut oil, then add eggs. Mix well.
4. Then add vanilla and orange extract.
5. Add wet ingredients with dry ingredients along with almond milk, cranberries and almond slivers.
6. Mix together well, then place into muffin liners
7. Bake for 25 – 30 minutes.
