Vanilla Breakfast Waffles (Light, Crispy, and Tasty)

These waffles are a little crispy on the outside and soft on the inside. They don’t feel like eggs or sponges. They taste just like real breakfast waffles and go great with butter or syrup that doesn’t have any sugar in it.
Things you need
¾ cup of almond flour
Two tablespoons of coconut flour
1 teaspoon of baking powder
A little bit of salt
Two big eggs
¼ cup of ricotta cheese made from whole milk
2 tablespoons of butter that has melted
2 tablespoons of almond milk without sugar
1 tablespoon of powdered monk fruit or erythritol
1 teaspoon of vanilla extract
How to do it
Warm up the waffle maker and lightly grease it.
Mix the almond flour, coconut flour, baking powder, and salt together in a bowl.
Put in the sweetener, vanilla, melted butter, almond milk, and eggs.
Mix until the mixture is smooth and a little thick.
Put the batter in the waffle maker and cook it for 3 to 4 minutes, or until it is golden brown and crispy.
Let the waffles sit for 1 to 2 minutes before serving so they can fully set.

Don’t put too much batter in the waffle maker.
