1 stick of butter, melted<\/span><\/div>\n<\/div>\n

1\/2 cup pecans or nut of choice, chopped<\/span><\/div>\n<\/div>\n

2 cups of Carrots, shredded<\/span><\/div>\n<\/div>\n

Cream Cheese Frosting<\/span><\/div>\n<\/div>\n

8 oz Cream cheese, softened<\/span><\/div>\n<\/div>\n

1\/2 cup Lakanto Powdered Sweetener<\/span><\/div>\n<\/div>\n

1\/2 stick of Butter<\/span><\/div>\n<\/div>\n
\n
1 tsp Vanilla extract<\/span><\/div>\n<\/div>\n

1\/3 cup Heavy cream<\/span><\/div>\n<\/div>\n

Instructions<\/span><\/div>\n<\/div>\n

Carrot Cake:<\/span><\/div>\n<\/div>\n

Preheat oven to 350 degrees. Set aside two 6in cake pans or one 9 inch cake pan with parchment paper.<\/span><\/div>\n<\/div>\n

In a large bowl, whisk together eggs, olive oil, and vanilla extract.<\/span><\/div>\n<\/div>\n

Add in all other dry ingredients: Sweetener, Almond flour, coconut flour, baking soda, baking powder, ground nutmeg, ground cinnamon, and salt.<\/span><\/div>\n<\/div>\n

Blend in melted butter, walnuts, and shredded carrots.<\/span><\/div>\n<\/div>\n
