This was my first attempt at a keto crisp sandwich\u2014and it turned out delicious! Perfect for breakfast, lunch, or even as a pizza crust.<\/span><\/div>\n<\/div>\n

Ingredients<\/span><\/div>\n<\/div>\n

\u00bd cup pork rind crumbs<\/span><\/div>\n<\/div>\n
\n
\u00bd cup shredded mozzarella cheese<\/span><\/div>\n<\/div>\n
\n
2 tbsp mayonnaise<\/span><\/div>\n<\/div>\n
\n
1 large egg<\/span><\/div>\n<\/div>\n
\n
Instructions<\/span><\/div>\n<\/div>\n

Make the Dough<\/span><\/div>\n<\/div>\n
\n
Whisk the mayonnaise and egg together in a bowl.<\/span><\/div>\n<\/div>\n
\n
Stir in mozzarella cheese and pork rind crumbs until combined.<\/span><\/div>\n<\/div>\n
\n
Let the dough rest for a few minutes to thicken.<\/span><\/div>\n<\/div>\n
\n
Cook the Crisp<\/span><\/div>\n<\/div>\n
\n
Heat a cold, dry, nonstick 8-inch skillet over medium heat (no oil needed).<\/span><\/div>\n<\/div>\n
\n
Add half of the dough to the pan.<\/span><\/div>\n<\/div>\n
\n
With wet hands, press the dough flat until it covers the bottom of the pan or forms a small round.<\/span><\/div>\n<\/div>\n

Crisp Both Sides<\/span><\/div>\n<\/div>\n
\n
Cook for 3\u20135 minutes, or until golden and crispy.<\/span><\/div>\n<\/div>\n

Flip and cook the other side until crisp.<\/span><\/div>\n<\/div>\n
\n
Make the Sandwich<\/span><\/div>\n<\/div>\n
\n
Flip once more, add cheese and\/or your favorite filling to one side.<\/span><\/div>\n<\/div>\n

Fold the other half over the top.<\/span><\/div>\n<\/div>\n
\n
Flip a few times until the filling is warm and the cheese is melted.<\/span><\/div>\n<\/div>\n
