My take:<\/span><\/div>\n<\/div>\n

2 eggs<\/span><\/div>\n<\/div>\n
\n
1 jumbo ripe avocado<\/span><\/div>\n<\/div>\n
\n
1 tbsp bacon bits<\/span><\/div>\n<\/div>\n
\n
.25 cup shredded cheese of choice<\/span><\/div>\n<\/div>\n
\n
salt and pepper to taste<\/span><\/div>\n<\/div>\n

Preheat lightly oiled pan medium-low.<\/span><\/div>\n<\/div>\n
\n
Halve avocado. Remove pit. Slice into ~1 cm thickness. [I store the remainder and turn it into avocado scrambled eggs.]<\/span><\/div>\n<\/div>\n

Crack eggs into avocado halves in pan. Salt and pepper to taste. Cook with lid ~10 min until yolks starting to firm.<\/span><\/div>\n<\/div>\n

Add bacon bits and cheese. Replace lid ~30 sec until cheese melted.<\/span><\/div>\n<\/div>\n

It’s essentially me being too impatient to wait for it to become an omelette. Mix up the eyes, diced avocado, and shredded cheese, and push it around in the pan until it kind of looks like scrambled eggs.
