Marinate the chicken:<\/p>\n<p>Mix chicken with yogurt, salt, black pepper, and lemon juice.<br \/>\nRest 20-30 mins while you prep everything else.<br \/>\n2. Make the green paste:<\/p>\n<p>Blend coriander, mint, green chilies, garlic, ginger, onion, coconut\/cashews, and cumin seeds with \u00bd cup water.<br \/>\nBlend to a smooth, vibrant green paste. Don\u2019t add too much water \u2014 you want it thick like in your photo.<br \/>\n3. Cook the chicken:<\/p>\n<p>Heat oil\/ghee in a wide pan or karahi on medium-high heat.<br \/>\nAdd cumin seeds, cardamoms, and cinnamon. Let them sizzle 30 seconds.<br \/>\nAdd marinated chicken. Sear 5-6 mins until the chicken turns white and starts to get light golden spots. Don\u2019t fully cook it yet.<br \/>\n4. Add masala &amp; green gravy:<\/p>\n<p>Lower heat to medium. Add turmeric and coriander powder. Stir 1 min.<br \/>\nPour in the entire green paste \u2014 this is the step happening in your picture.<br \/>\nMix well. The paste will sizzle and turn a deeper green. Cook 4-5 mins until oil starts to separate slightly.<br \/>\n5. Simmer:<\/p>\n<p>Add \u00bc to \u00bd cup water depending on how thick you want the gravy.<br \/>\nCover and simmer 10-12 mins on low heat until chicken is tender and oil floats on top.<br \/>\nStir in cream or whisked yogurt if using. Cook 2 mins more. Don\u2019t boil after adding cream or it can split.<br \/>\nFinish with garam masala and adjust salt.<br \/>\n6. Serve:<\/p>\n<p>Garnish with fresh coriander.<br \/>\nServe hot with naan, paratha, or steamed basmati rice.<br \/>\nPro tips:<\/p>\n<p>Bright green color: Add a handful of spinach leaves to the green paste while blending. It boosts color without changing taste. Also, don\u2019t overcook after adding the green masala \u2014 prolonged cooking dulls the color.<br \/>\nNo bitter taste: Use more coriander than mint. Too much mint makes it bitter. Stems of coriander are fine to use.<br \/>\nRestaurant-style smoothness: Strain the green paste if you want it silky.
